Going to a restaurant, for me, is much more than sitting at the table and eating. Knowing the story behind and meeting the people who have made this project possible is relevant to being able to position yourself correctly on stage. And let's not forget that you need to be on stage before the performance begins.
Jeroni Castell will never be aware of what he made me live that night while he explained to me with his shining eyes his story, his life project. He talks about his family with devotion and about cooking with passion. Sensitivity and honesty that stole my heart before trying a dish.
He and his wife Carmen are, since 1994, dedicated body and soul to this joint project. In 2009 the Repsol Guide awarded him 1 Repsol Sun, in 2012 the Generalitat gave them the Diploma of Honor for Tourism Merit and 2013 was when they received the first Michelin star. Constant work with progressive improvement.
The restaurant is located in what was the first quarry in Ulldecona: where the stones for the mills were made, called "moles"... that's where the name comes from. The entrance is so cute. Plants and lighting are perfect. A porch, with wooden beams and restored country furniture, seems to invite you to enjoy the first glass of wine before dinner or the last glass after dessert.
The hall is amazing. It has a mix of styles that I like. The stone walls and classic white vaults contrast with the modern functional furniture they use to display their wines. From here two rooms are born. A room is open-plan, rather large. They divide it into 2 if they consider it appropriate; the other room is smaller and more intimate.
They are so restless and creative that they have not settled for having a great restaurant. They have created "Les Moles Events" for weddings, celebrations, catering, business services and ... what I have also experienced: the Nits d'estiu, where they mix show, good cuisine and surroundings. I went to a concert one night in July. It was made in the quarry and it was a delicious evening. The menu consisted of fruit gazpacho with prawns and mussels, corvina, hollandaise with piparra and americana with its bones, baked kid with mushrooms and lemon pie. Everything great!
Type: very creative author cuisine. The tasting menu, which I tried, simulates a child's birthday party. Nothing is what it seems. They play tricking you with the eyes, which I found fascinating, funny, innovative and surprising.
- A syrup, just in case, don't get sick (dalmy - cocktail) - I fell ill, but from creativity!
- Some jelly beans:
- Pure oil hearts disguised as jelly beans - They soften the mouth.
- Licorice Roll - Everything changes when you taste it... it's squid ink! I loved it!
- Oreo Cookie - It is an olive grove with sobrasada ice cream. Surprising taste. Very new mix for me.
- A chupa-chup - Mushrooms with truffle jelly... a real sin. Delicious. Without a doubt, it is one of the star dishes.
- Pa en tomaca i fuet - Hispanic goat fuet from ports and oil caramel in tear. Tears fell on me from how good it was.
- Spaghetti - Oil with pesto... one of Jeroni's magic tricks.
- An egg with potatoes - Very fine mashed potato with pumpkin and ham. Stole my heart!
- Petit Suisse - A very special beet yogurt.
- An ice lolly - Delta Oyster with salicornia and citronella ice cream. A jewel.
- Jelly beans and sweets - Salad with mackerel, prawns, basil, tomato, blood orange and black garlic vinaigrette. A bit of everything!
- Fried little fish sandwich - Little fish at low temperature with tomato and olive oil air. Yes... a sandwich can be made with breadcrumbs!
- Hot Dog - Atmetlla de Mar tuna with spicy romesco sauce. Amacing.
- Ravioli - Foie and carob. I have discovered that carob is one of the best thickeners... it is what it takes to know the product of the earth and find the best applications. Without a doubt, another star dish.
- Fair apple - Porc ral from Aviñón. I can not close my mouth.
- Let's play in the snow - Gin-lemon sorbet. A show.
- Party ending sandwich - Party, no. Huge party.
- Kinder Egg - Couldn't miss the chocolate. One of the best desserts I've ever eaten.
- A game, and now... for real! To play! - Three in a row. I can not compete. They are unbeatable.
Very different gastronomic experience. How difficult to reflect in words so much creativity together!
If you want to enjoy, do not hesitate to go and visit them with a previous reservation.
